Schuber Mitchell Homes’ Favorite Christmas Recipes

You’ll often hear our team members say that one of the best parts of joining the company are the incredible gatherings we have together (which always involve a ton delicious food).

The wives of our Leadership Team are wonderful hosts, chefs and entertainers of these events, and many of us are always trying to get their famous recipes to use as our own. Today is our lucky day. 

As our team gears up for a well-deserved holiday at home with their loved ones, many of us have been thinking about what we’ll prepare for our Christmas meal this year. 

These recipes – shared by the wonderful families of our Leadership Team, will be the real star of your Christmas meal. These tried-and-true recipes that have been passed down for generations (and made with lots of love) are our gift to you this holiday season. 

Angie’s Recipe 

“Candy Cane Cookies” 

Ingredients: 


1/3 cup finely crushed peppermint candy 

1/3 cup sugar 

½ cup shortening 

½ cup butter, softened 

1 cup powdered sugar 

1 egg, lightly beaten 

1 tsp vanilla extract 

1 tsp almond extract 

2 ½ cups flour 

1 tsp salt 

½ tsp red food coloring 

Directions: 


Combine crushed peppermint candy and 1/3 cup sugar in a small mixing bowl. Mix well and set aside. 


Cream shortening and butter in a large mixing bowl; gradually add 1 cup sugar, beating until light and fluffy. Add egg and beat well. Stir in almond and vanilla extract. 


Add flour and salt; mix well. 

Divide the dough in half; tint half of the dough with red food coloring. Shape tinted and plain dough by teaspoonfuls into 4 ½" rolls on a lightly floured surface. 

Place a tinted and plain roll side by side, carefully twisting together. Curve one end down to resemble a cane. Repeat procedure with remaining dough. 

NOTE: Because this dough requires you to handle and roll the dough with your hands, it may be necessary that you chill your dough in the refrigerator before shaping. 

Donna’s Recipe 

“Homemade Crescent Rolls” 

Ingredients: 


1 cup boiling water 

1 cup Crisco 

¾ cup sugar 

1 cup warm water 

2 packages yeast 

2 eggs 

2 cup flour 

½ tsp salt 


Directions: 


Mix together 1 cup boiling water, 1 cup Crisco and ¾ cup sugar together in large bowl and let cool. 


In a smaller bowl, dissolve 2 packages of yeast in 1 cup of warm water and add to the above. 


Add 2 eggs, 2 cups flour and ½ tsp salt to mixture and combine well. Beat and add to the mixture. Add 4 ¼ cups flour. Refrigerate at least 1 hour (up to 24 hours). 

Separate dough into thirds and roll out into large circles. Cut dough into pie shaped pieces (12 to a circle). 

Roll into crescents then let rise on cookie sheet for 2 hours or until doubled in size.

Bake at 400° for 10 minutes, or until golden brown. 

Danica’s Recipe 

“Mom’s Amish Sugar Cookies”

Ingredients: 


1 cup margarine 

1 cup vegetable oil 

1 cup sugar 

1 cup powdered sugar 

2 eggs 

1 tsp vanilla 

4 ½ cups flour 

1 tsp baking soda 

1 tsp cream of tartar 


Directions: 


In a large bowl, cream together the butter and oil, then add in sugars. Beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar together; gradually add to creamed mixture. 

Drop by small teaspoonfuls onto ungreased baking sheets and top with colored sugar for decoration. 

 Bake at 375° until lightly browned (8-10 minutes). 

Remove to a wire rack to cool. Yields: 5 dozen.
